OF OUR INGREDIENTS

Noiseraie raw materials are carefully selected.
We ensure that the origin of our products is in adequacy with Noiseraie values.

Almonds

Origin Italy, Spain.

Sectors: We work on a large part of our direct supply with 2 sectors: The Sicilian sector, and the Spanish sector.

In Spain, our producers own 30 ha of almond trees located in the south of Spain, in Albacette and 200 ha south of Madrid in Toledo . These almond trees flower at the end of February, and give an almond harvest in September.

In Sicily, it is on 400 ha in the Val di Noto (South-East of Sicily), more precisely in the Vendicari reserve (protected site ) that the almond is cultivated. The almond trees bud there at the end of February, for a harvest in August.

In Spain or Sicily, farmers group together the almonds harvested in a partner brewery, audited and validated by us. This will sort, break the shells, prune (flash steam & mechanical treatment ), and condition the almonds for Perl'Amande.

At Perl'Amande, the almonds are pre-ground under vacuum to control their humidity. This pre-grinding is cold refined using a stone grinder. The almonds are raw, which preserves an authentic taste and their nutritional qualities.

FRANCE: Perl'Amande is in contact with French farmers, in order to work on the revival of organic almond cultivation in France.

Hazelnuts

Origin Italy, Türkiye.

Sector: Our hazelnuts are produced in Turkey, near the warm shores of the Black Sea, in the province of Ordu. Planting takes place in January and February for harvest in August and September. The hazelnuts are then dried and then shelled, sorted and packaged before being transported to our factory in Mézières-en-Brenne.

Cashew nuts

Origin Vietnam.

The cashew nuts transformation process is mainly manual and is done in different stages:
- Harvesting and separation of seeds

- Steam treatment to remove the acid at a minimum of 120 degrees (the shells then serve as fuel for the boiler) - Break the shell and extract the cashew nut- Heat treatment (hot air) and then remove the skin from the seed

- Classification into different sizes.

Among the employees, 85% are women. They mainly work in the classification process. They receive work uniforms, masks, caps, and disposable gloves. Steaming, shell breaking and heat treatment are done mechanically to prevent injury.

Current sector: We have a strategy for securing raw materials considered to be at risk, such as cashew nuts.
Indeed, the extraction of the cashew nut from its shell is at risk, which is why we are currently setting up a collaboration with a producer who ensures good working conditions for his employees, especially during this task .

Cane sugar

Origin Brazil, Paraguay.

Working with a sector means being in adequacy with our CSR values:
Reducing intermediaries allows us to foster lasting relationships with our producers by ensuring them a fixed annual price before harvest. Guaranteeing stability in their employment, they can live decently while envisaging the development of their farm.

The cane sugar from Fair Trade controlled according to the Fair For Life standard used in our products, comes from the Loiret sector, produced in the Machado factories in Goianésia , Brazil. By dealing with this company, we guarantee environmental protection, as well as economic and social development (jobs, wages and technology).
The sector values each of the producers and offers them several programs on their services, programs to which the Fair For Life Development Fund (www.fairforlife.org) applies:
- Essay competition (to encourage reading and writing) ,

- Football school: The Jalles Machado Sports Association has, since 1997,

- Organic vegetable garden,

- Dentition Project: preventing dental diseases, and carrying out educational actions with children in schools and other public institutions.

But it is also the stability of the taste! With a precise knowledge of the origin of the ingredients, we can guarantee a balance in our recipes and already think about our future innovations.

Cocoa

Origin Sao Tome, Peru.

Working with a sector means being in adequacy with our CSR values:

Reducing intermediaries allows us to foster lasting relationships with our producers by ensuring them a fixed annual price before harvest. Guaranteeing stability in their employment, they can live decently while envisaging the development of their farm.

The cocoa used in our products comes from the Organic & Fair Trade sector controlled according to the Fair For Life standard , where several suppliers have a traceability system, allowing transparency in the production chain. Working for a better standard of living for producers, they use the Fair Trade premium in various infrastructures, training, social and environmental developments, etc.
